Classic Nigerian Party Jollof Rice Recipe

Ingredients:

– 2 cups long grain parboiled rice
– 1 can of tomato paste
– 1 red bell pepper, diced
– 1 onion, diced
– 2 cloves of garlic, minced
– 1 tsp thyme
– 1 tsp curry powder
– 1 tsp paprika
– 1 tsp dried thyme
– 1 tsp dried basil
– 1/2 cup vegetable oil
– Salt and pepper to taste
– 3 cups of chicken broth

Steps:

1. Heat vegetable oil in a large pot over medium heat.
2. Add diced onions and garlic, sauté until fragrant.
3. Add in diced red bell pepper and cook until softened.
4. Stir in tomato paste and cook for 5 minutes.
5. Add in thyme, curry powder, paprika, dried thyme, dried basil, salt, and pepper. Mix well.
6. Pour in chicken broth and bring to a boil.
7. Add in the parboiled rice, stir well, cover the pot, and reduce heat to low.
8. Allow the rice to cook for about 20-25 minutes or until the liquid is absorbed and the rice is tender.
9. Fluff the rice with a fork and serve hot.
