Classic Chicken Curry Recipe

Ingredients:

1 lb chicken, cut into bite-sized pieces
1 onion, finely chopped
2 cloves garlic, minced
1-inch piece of ginger, grated
1 can coconut milk
2 tbsp curry powder
1 tsp turmeric
1 tsp cumin
1 tsp coriander
Salt and pepper to taste
2 tbsp vegetable oil

Steps:

Heat vegetable oil in a large skillet over medium heat.
Add onions, garlic, and ginger and sauté until onions are translucent.
Add chicken pieces and cook until browned on all sides.
Add curry powder, turmeric, cumin, coriander, salt, and pepper. Stir to coat chicken evenly.
Pour in coconut milk and bring to a simmer. Cook for 20-25 minutes until chicken is cooked through and sauce has thickened.
Serve hot over rice or with naan bread.

Spicy Thai Red Curry Chicken Recipe

Ingredients:

1 lb chicken, cut into bite-sized pieces
1 red bell pepper, sliced
1 can coconut milk
2 tbsp red curry paste
1 tbsp fish sauce
1 tbsp soy sauce
1 tbsp brown sugar
1 cup chicken broth
2 tbsp vegetable oil

Steps:

Heat vegetable oil in a large skillet over medium heat.
Add chicken pieces and cook until browned on all sides.
Add red curry paste and stir to coat chicken.
Add bell pepper, coconut milk, fish sauce, soy sauce, brown sugar, and chicken broth. Bring to a simmer.
Cover and cook for 15-20 minutes until chicken is cooked through and bell pepper is tender.
Serve hot over steamed jasmine rice.
