Classic Sugar Beans Stew

Ingredients:

2 cups dried sugar beans
1 onion, diced
2 cloves garlic, minced
2 carrots, diced
2 tomatoes, chopped
1 tsp paprika
Salt and pepper to taste
4 cups vegetable broth

Steps:

Soak the sugar beans overnight in water.
In a large pot, sauté the onion and garlic until translucent.
Add in the carrots and tomatoes, and cook for a few minutes.
Stir in the paprika, salt, and pepper.
Drain the sugar beans and add them to the pot, along with the vegetable broth.
Simmer for about 1-2 hours, or until the beans are tender.
Adjust seasoning to taste and serve hot.

Ingredients:

2 cups cooked sugar beans
1 onion, chopped

1 can coconut milk
