Classic Claypot Chicken Rice Recipe

Ingredients:
– 1 cup jasmine rice
– 1 lb chicken thighs, bone-in and skin-on
– 1 Chinese sausage, sliced
– 2 cloves garlic, minced
– 1 inch ginger, sliced
– 2 cups chicken broth
– 2 tbsp soy sauce
– 1 tbsp oyster sauce
– 1 tbsp sesame oil
– Green onions, chopped for garnish

1. Rinse jasmine rice in cold water until water runs clear. Drain and set aside.
2. Marinate chicken thighs with soy sauce and oyster sauce for at least 30 minutes.
3. Heat a claypot or heavy-bottomed pot over medium heat. Add in Chinese sausage and cook until slightly caramelized.
4. Add in garlic and ginger, sauté until fragrant.
5. Add in marinated chicken thighs, skin-side down. Cook until browned, then flip and cook for another 5 minutes.
6. Add in rinsed rice and chicken broth. Bring to a boil, then reduce heat to low and simmer for 15-20 minutes, or until rice is cooked through and chicken is tender.
7. Drizzle sesame oil over the top and garnish with green onions before serving.

– 4-5 shiitake mushrooms, sliced
– 2 cloves garlic, minced
– 1 inch ginger, sliced
– 2 cups chicken broth
– 2 tbsp soy sauce
– 1 tbsp oyster sauce
– 1 tbsp sesame oil
– Green onions, chopped for garnish
