Spanakopita Bites

Spanakopita is a classic Greek dish made with flaky phyllo dough and a savory spinach and feta cheese filling. These bite-sized appetizers are a perfect way to start off a romantic meal.


1 package of phyllo dough
1 pound of fresh spinach, chopped
1 cup of crumbled feta cheese
1/2 cup of chopped green onions
1/4 cup of chopped fresh dill
1/4 cup of olive oil
Salt and pepper to taste

Preheat the oven to 375°F.
In a large skillet, heat the olive oil over medium heat. Add the spinach and cook until wilted, about 3-4 minutes.
Remove the skillet from heat and stir in the feta cheese, green onions, dill, salt, and pepper.
Take one sheet of phyllo dough and brush with olive oil. Place another sheet on top and repeat until you have 4 layers.
Cut the phyllo dough into squares and place a spoonful of the spinach mixture in the center of each square.
Fold the phyllo dough over the filling to form a triangle. Brush with more olive oil.
Bake in the oven for 20-25 minutes, or until the phyllo is golden brown and crispy.
