Kee Chang Recipe: Classic Sticky Rice Dumplings

Ingredients:

1 lb glutinous rice
1 lb pork belly, diced
5 dried shiitake mushrooms, soaked and diced
5 cloves garlic, minced
2 tbsp soy sauce
1 tbsp oyster sauce
1 tsp sugar
1/2 tsp five spice powder
salt and pepper to taste
bamboo leaves, soaked in hot water

Kee Chang (素碱水粽) – Little Nonya’s Cookies

Steps:

Soak glutinous rice in water for at least 2 hours, then drain.
Marinate pork belly with soy sauce, oyster sauce, sugar, five spice powder, salt, and pepper for 30 minutes.
In a pan, sauté garlic until fragrant. Add in marinated pork, mushrooms, and glutinous rice. Cook until pork is cooked through.
Take a bamboo leaf and shape it into a cone. Fill with rice mixture and fold leaf to enclose filling.
Steam dumplings for 1-2 hours until rice is cooked through. Serve hot and enjoy!

Kee Chang Recipe: Sweet Red Bean Paste Dumplings

Ingredients:

1 lb glutinous rice
1 can sweet red bean paste
1/2 cup brown sugar
1/2 cup water
bamboo leaves, soaked in hot water

Steps:

Soak glutinous rice in water for at least 2 hours, then drain.
In a pan, combine brown sugar and water. Cook until sugar is dissolved to make a syrup.
Take a bamboo leaf and shape it into a cone. Fill with rice and red bean paste. Fold leaf to enclose filling.
Steam dumplings for 1-2 hours until rice is cooked through. Serve with syrup drizzled on top. Enjoy!

Kee Chang Recipe: Spicy Pork Belly and Kimchi Dumplings

Ingredients:

1 lb glutinous rice
1 lb pork belly, diced
1 cup kimchi, chopped
2 tbsp gochujang (Korean chili paste)
2 cloves garlic, minced
2 green onions, chopped
salt and pepper to taste
bamboo leaves, soaked in hot water

Steps:

Soak glutinous rice in water for at least 2 hours, then drain.
In a pan, sauté garlic until fragrant. Add in pork belly and cook until browned.
Add kimchi, gochujang, green onions, salt, and pepper. Cook for another 5 minutes.
Take a bamboo leaf and shape it into a cone. Fill with rice mixture and fold leaf to enclose filling.
Steam dumplings for 1-2 hours until rice is cooked through. Serve hot and enjoy the spicy kick!
