Classic Beef Lasagne

Ingredients:
– 1 pound ground beef
– 1 onion, chopped
– 2 cloves garlic, minced
– 1 can diced tomatoes
– 1 can tomato sauce
– 1 teaspoon dried oregano
– 1 teaspoon dried basil
– Salt and pepper to taste
– 9 lasagne noodles
– 2 cups shredded mozzarella cheese
– 1 cup grated Parmesan cheese
– 1 cup ricotta cheese

Steps:
1. In a large skillet, brown the ground beef over medium heat. Add the onion and garlic, cooking until softened.
2. Stir in the diced tomatoes, tomato sauce, oregano, basil, salt, and pepper. Simmer for 10 minutes.
3. Preheat the oven to 375°F (190°C).
4. In a greased baking dish, layer 3 lasagne noodles, 1/3 of the meat sauce, 1/3 of the mozzarella, and 1/3 of the Parmesan.
5. Repeat the layers two more times, ending with a layer of cheese on top.
6. Dollop the ricotta cheese over the lasagne and cover with foil.
7. Bake for 25 minutes, then remove the foil and bake for an additional 10 minutes until bubbly and golden.

Spinach and Mushroom Lasagne

Ingredients:
– 1 tablespoon olive oil
– 1 onion, chopped
– 2 cloves garlic, minced
– 8 oz mushrooms, sliced
– 1 can chopped spinach, drained
– 1 teaspoon dried thyme
– 1 teaspoon dried rosemary
– Salt and pepper to taste
– 9 lasagne noodles
– 2 cups shredded Gruyere cheese
– 1 cup grated Pecorino Romano cheese
– 1 cup ricotta cheese

Steps:
1. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, cooking until softened.
2. Add the mushrooms and cook until browned. Stir in the spinach, thyme, rosemary, salt, and pepper.
3. Preheat the oven to 375°F (190°C).
4. In a greased baking dish, layer 3 lasagne noodles, 1/3 of the mushroom mixture, 1/3 of the Gruyere, and 1/3 of the Pecorino Romano.
