Classic Vanilla Bean Ice Cream

Ingredients:

2 cups heavy cream
1 cup whole milk
3/4 cup sugar
1 vanilla bean, split and seeds scraped
5 large egg yolks

Steps:

In a saucepan, combine the cream, milk, sugar, and vanilla bean and seeds. Heat over medium heat until hot but not boiling.
In a separate bowl, whisk the egg yolks. Slowly pour the hot cream mixture into the yolks, whisking constantly.
Pour the mixture back into the saucepan and cook over low heat, stirring constantly, until the mixture thickens and coats the back of a spoon.
Strain the mixture through a fine mesh sieve and chill in the refrigerator for at least 4 hours.
Pour the chilled mixture into an ice cream maker and churn according to manufacturer’s instructions.
Transfer the churned ice cream to a container and freeze for at least 2 hours before serving.

Strawberry Balsamic Ice Cream

Ingredients:

2 cups heavy cream
1 cup whole milk
3/4 cup sugar
1 pint fresh strawberries, hulled and diced
2 tbsp balsamic vinegar

Steps:

In a blender, puree the strawberries until smooth. Add the balsamic vinegar and blend until combined.
In a saucepan, combine the cream, milk, and sugar. Heat over medium heat until hot but not boiling.
Slowly pour the cream mixture into the strawberry puree, whisking constantly.
Chill the mixture in the refrigerator for at least 4 hours.
Pour the chilled mixture into an ice cream maker and churn according to manufacturer’s instructions.
Transfer the churned ice cream to a container and freeze for at least 2 hours before serving.
