Classic Beef Birria Tacos

Ingredients:

2 lbs beef stew meat
1 onion, chopped
4 cloves garlic, minced
1 can diced tomatoes
2 cups beef broth
4 dried guajillo chilies
2 dried ancho chilies
1 tbsp cumin
1 tbsp oregano
Salt and pepper to taste
Corn tortillas
Chopped cilantro, onion, and lime wedges for garnish

Steps:

Toast the dried chilies in a dry skillet until fragrant. Remove the stems and seeds, then soak in hot water for 20 minutes.
In a large pot, brown the beef stew meat in batches. Remove and set aside.
In the same pot, sauté the onion and garlic until translucent. Add the diced tomatoes, beef broth, cumin, oregano, salt, and pepper.
Add the soaked chilies to a blender with some of the soaking liquid. Blend until smooth, then pour into the pot with the beef mixture.
Return the beef to the pot and simmer for 2-3 hours until tender.
Shred the beef and serve in corn tortillas with cilantro, onion, and lime wedges.

Birria Quesatacos

Ingredients:

2 lbs beef chuck roast
1 onion, chopped
4 cloves garlic, minced
1 can diced tomatoes
2 cups beef broth
4 dried guajillo chilies
2 dried ancho chilies
1 tbsp cumin
1 tbsp oregano
Salt and pepper to taste
Corn tortillas
1 cup shredded cheese
Chopped cilantro, onion, and lime wedges for garnish

Steps:

Follow steps 1-4 from the Classic Beef Birria Tacos recipe.
After shredding the beef, heat a skillet over medium heat and place a corn tortilla in the pan.
Sprinkle some cheese on half of the tortilla, then add a spoonful of the shredded beef on top.
Fold the tortilla in half to create a quesadilla, then cook until the cheese is melted and the tortilla is crispy.
Repeat with the remaining tortillas and beef mixture.
Serve the Birria Quesatacos with cilantro, onion, and lime wedges.
