Classic Upma Recipe

Ingredients:

1 cup semolina
1 onion, chopped
1 green chili, chopped
1 carrot, grated
1/4 cup peas
1/4 tsp mustard seeds
1/4 tsp cumin seeds
1/4 tsp turmeric powder
1/4 tsp asafoetida
2 cups water
Salt to taste
2 tbsp oil

Steps:

Heat oil in a pan and add mustard seeds, cumin seeds, and asafoetida.
Add chopped onion, green chili, carrot, and peas. Saute until vegetables are cooked.
Add semolina and roast until it turns golden brown.
Add water, turmeric powder, and salt. Mix well.
Cover and cook on low heat until the upma is cooked through.
Serve hot with chutney or pickle.

Spicy Masala Upma Recipe

Ingredients:

1 cup semolina
1 onion, chopped
1 tomato, chopped
1 green chili, chopped
1/4 cup mixed vegetables (carrot, peas, beans)
1/2 tsp ginger-garlic paste
1/2 tsp garam masala
1/4 tsp turmeric powder
1/4 tsp red chili powder
2 cups water
Salt to taste
2 tbsp oil

Steps:

Roast semolina in a pan until golden brown. Set aside.
Heat oil in a pan and add chopped onion, tomato, green chili, and ginger-garlic paste.
Add mixed vegetables and saute until cooked.
Add turmeric powder, red chili powder, garam masala, and salt. Mix well.
Add water and bring to a boil.
Slowly add roasted semolina while stirring continuously to avoid lumps.
Cover and cook on low heat until the upma is cooked through.
Serve hot with a dollop of ghee on top.
