Classic Garlic-Soy Bok Choy Stir-Fry

Ingredients:

1 lb baby bok choy, washed and trimmed
2 cloves garlic, minced
2 tbsp soy sauce
1 tbsp sesame oil
1 tsp ginger, grated
1 tbsp vegetable oil
Salt and pepper to taste

Steps:

Heat vegetable oil in a large skillet over medium heat.
Add garlic and ginger, sauté until fragrant.
Add bok choy and stir-fry for 3-4 minutes, until leaves are wilted and stems are tender.
Drizzle soy sauce and sesame oil over bok choy, toss to combine.
Season with salt and pepper to taste.
Serve hot as a side dish or over rice as a main course.

Spicy Sriracha Bok Choy Slaw

Ingredients:

1 lb bok choy, shredded
1 carrot, grated
1/4 cup mayonnaise
2 tbsp sriracha sauce
1 tbsp rice vinegar
1 tsp honey
Salt and pepper to taste

Steps:

In a large bowl, combine bok choy and carrot.
In a separate bowl, whisk together mayonnaise, sriracha, rice vinegar, and honey.
Pour dressing over bok choy mixture and toss to coat evenly.
Season with salt and pepper to taste.
Chill in the refrigerator for at least 30 minutes before serving as a refreshing slaw.

Bok Choy and Mushroom Dim Sum Dumplings

Ingredients:

1 lb bok choy, finely chopped
1/2 cup shiitake mushrooms, diced
2 cloves garlic, minced
1 tbsp soy sauce
1 tsp sesame oil
1 package dumpling wrappers
1 egg, beaten (for sealing)

Steps:

In a skillet, sauté garlic until fragrant.
Add bok choy and mushrooms, cook until softened.
