Ingredients:

2 lbs potatoes, peeled and diced
1/2 cup mayonnaise
2 tbsp mustard
1/4 cup chopped celery
1/4 cup chopped red onion
Salt and pepper to taste

Steps:

Boil the diced potatoes in salted water until fork-tender. Drain and let cool.
In a large bowl, mix together the mayonnaise, mustard, celery, and red onion.
Add the cooled potatoes to the bowl and toss until evenly coated.
Season with salt and pepper to taste.
Refrigerate for at least 1 hour before serving.

Ingredients:

2 lbs potatoes, peeled and diced
1/2 cup sour cream
1/4 cup mayonnaise
1 cup shredded cheddar cheese
