Classic Minestrone Soup Recipe

Ingredients:

1 onion, diced
2 carrots, diced
2 celery stalks, diced
2 cloves of garlic, minced
1 can of diced tomatoes
4 cups of vegetable broth
1 can of kidney beans, rinsed and drained
1 zucchini, diced
1 cup of small pasta
1 teaspoon of dried oregano
Salt and pepper to taste

Instructions:

In a large pot, sauté the onion, carrots, celery, and garlic until they are softened.
